The zip file extracts to a single, self-contained, 'df' folder. It contains two .app files: 'Dwarf Fortress LNP.app', which is just PyLNP.app renamed and with a nicer icon, and 'Dwarf Fortress.app', which just runs dfhack directly using the settings that were last used with the 'Dwarf Fortress LNP.app'.
This download, as other Mac releases, suffers from the well known issue of app translocation, which means that the uncompressed folder needs to be moved somewhere else before running the .app files. Sadly, I tried it myself and it's still not working. In the meantime, I added a Very Hacky 'remove_quarantine' script to remove the attribute from the .app files that makes them run out of app translocation.
